Approval of board minutes from October 29th, 2007

  1. Cooking Lesson
    • DATE: Friday January 18th, 2007
      TIME: 3:00pm, approx 1.5 hours
      LOCATION:Barbara-Jo’s Books to Cooks
      This private cooking class will consist of a cooking demonstration of recipes, a tasting of each recipe, and BC wine for the guests. The focus of the recipes will be on Pacific Northwest Cuisine, utilizing local, regional and seasonal ingredients. The class will be taught by 2-3 of Vancouver’s top chefs and members of the Chefs Table Society of BC. Net proceeds from the class will be donated to the Chefs Table Society of BC.
      DETAILS:

      • Private Class for Group of New York Chefs

      • Number of Guests: 12 – 15 people

      • Cost: $150.00 per head (includes food, wine, demo of 4 recipes, Q&A, 1.5 hours)

      • Demonstration format cooking class and tasting

      • 4 recipes featuring local BC ingredients

      • Copies of recipes for each guest

      • Net proceeds will be donated to the Chefs Table Society of BC

      • Participating chefs: Vikram, David, Scott, Tony and Julian have offered to teach

      • Service: Andrew and Tiffany

      • BC Wine: Sid will looking into sourcing wine for the event
  2. Website
    • Andrew proposes the CTS links its website with Urban Diner.  The CTS would keep its own website with information but discontinue the use of the forum on the website.  CTS could have an icon placed on the top banner of the Urban Diner at no charge to the society and no contractual obligations.  The icon would link to the CTS website.  Email and private messaging would be possible still
    • The banner could include a monthly edited question to ask the members of the CTS.   Examples of questions: Is the Red Seal still valued in our industry today?
    • Board members will send bios (maximum 50 words) and photos to Tiffany to have posted on our current website.
  3. Fundraising
    • Fundraising dinner hosted by Don at Opus early February 2008 (4th or 11th).  Fermentation (cultured) is the theme of the fundraising dinner.  There will be 5 tables of 10 with a chef at each table.  The event will be posted on Urban Diner and Tiffany will put out a press release as well.   The 5 course dinner will be prepared by 5 up and coming chefs.
  4. BC Foodservice Expo
    • Chefs Table has been offered a free space at the BC Foodservice Expo at BC Place January 27th & 28th
    • Organizer would like us to have an author’s corner table where some of our chefs (members or board) can promote, sell and sign their cookbooks
    • Timing is Sunday Jan 27th from 11am – 5pm, Monday January 28th from 10am – 5pm
    • Can also have a chef’s table society info station at table & sign up new members.  Mary and Tiffany will be present.  Need more chefs to volunteer to attend.
    • Open to other options as well for what we would like to do with the space, can do a variety of things to fill up all of the time slots over the two days
    • The board is accepting the offer of the table for the show.
    • Tiffany is to contact Barbara Jo to see how many books the CTS has in storage, books will be used at the show.
  5. New Business

    • Vikram will send a letter of support to Rob Feenie from the board.
    • Vikram will draft a letter of condolence to send to James Barber’s wife.
    • Scott is going to put together a proposal for the CTS to offer a James Barber Scholarship.
    • Urban Dinner Restaurant Awards on February 18, 2008.  Voting polls open on UD on January 1st, 40 categories to vote on.

  • Next Board meeting will be held Monday, January 7, 2008, 2pm Vij’s Restaurant.
  • Board meetings will be held the last Monday of every month.  Meetings will not be held in July, August or December.
